Instructions
Make the Wonton Filling
In a bowl, combine ground pork, shrimp (if using), green onions, soy sauce, Shaoxing wine, sesame oil, ginger, garlic, salt, pepper, and water. Mix vigorously in one direction until sticky.
Fill the Wontons
Place a wonton wrapper on a clean surface. Add 1 teaspoon of filling to the center. Dip your finger in water and moisten the edges. Fold the wrapper in half to form a triangle, pressing to seal. Bring the two bottom corners together and press to seal.
Make the Spicy Sauce
In a bowl, whisk together chili oil, soy sauce, black vinegar, sesame oil, garlic, ground Szechuan peppercorns, sugar, and hot water.
Cook the Wontons
Bring a large pot of water to a boil. Add the wontons in batches and cook for 3 to 4 minutes until they float and the filling is cooked. Remove with a slotted spoon.
Toss and Serve
Place the cooked wontons in a bowl. Pour the spicy sauce over them and toss gently. Garnish with green onions, cilantro, and sesame seeds. Serve immediately.
