In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, onion powder, and paprika until well combined and smooth.

Pour the egg mixture evenly over the bread and sausage. Press down gently with a spatula to ensure all the bread is submerged. Sprinkle the remaining cheese on top. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight (8 to 12 hours).

Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let sit at room temperature for 15 to 20 minutes while the oven preheats.

Bake uncovered for 45 to 55 minutes, until the casserole is puffed, golden brown, and a knife inserted in the center comes out clean. If the top is browning too quickly, tent loosely with foil.
